I recently made this cake for my dad’s 80th birthday party at his request. It had been a minute since I’d made something this decadent and involved. It’s been nearly 2 years since I baked professionally, and I still miss long days in creation mode.
I wish I had snapped better pictures of the bday cake (my inner food photographer would be very disappointed in me), but my phone has a way of losing itself when I’m busy juggling many tasks and wearing many hats.


My version is gluten-free, dairy-free, and free of processed sugar, without sacrificing the texture and decadence that make German chocolate cake what it is.
It has all the richness and nostalgia of the classic: tender chocolate cake layers, that iconic coconut pecan filling, and a creamy, very chocolately frosting.
