German Chocolate Cake

Gluten-free + Dairy-free

I recently made this cake for my dad’s 80th birthday party at his request. It had been a minute since I’d made something this decadent and involved. It’s been nearly 2 years since I baked professionally, and I still miss long days in creation mode.

I wish I had snapped better pictures of the bday cake (my inner food photographer would be very disappointed in me), but my phone has a way of losing itself when I’m busy juggling many tasks and wearing many hats.

My version is gluten-free, dairy-free, and free of processed sugar, without sacrificing the texture and decadence that make German chocolate cake what it is.

It has all the richness and nostalgia of the classic: tender chocolate cake layers, that iconic coconut pecan filling, and a creamy, very chocolately frosting.

In this class, we’re focusing not only on the recipe itself, but on the techniques that make specialty baking feel approachable and repeatable. More than anything, this class is about learning how to make a cake that people love first and only then realize it happens to be gluten-free, dairy-free, and refined sugar-free.

We’ll walk through how to create a cake that still feels indulgent and bakery-worthy while using ingredients that better support how many of us like to eat and serve our families

I’ll also be sharing an egg-free version of the German coconut filling, which has become one of my favorite ways to make this cake more accessible for different dietary needs.
